Seeded Chicken Schnitzel

Ingredients

  • 4 skinless chicken breasts 50g plain flour
  • 2 eggs (lightly beaten)
  • 80g panko crumbs (or lightly toasted breadcrumbs make an ideal substitute)
  • 80g sesame seeds
  • 40g sunflower seeds (roughly chopped)
  • 1.5 tbsp coriander seeds (slightly pounded in a pestle and mortar)
  • 1 tsp turmeric
  • 0.5 tsp cayenne pepper
  • 100ml of rapeseed oil
  • Salt and pepper
  • What A Pickle! Ranch dressing

Method

  • Put the rapeseed oil into a frying pan and turn on heat (keep an eye on it, when it sizzles with a breadcrumb it is the correct temperature).
  • Place the chicken breasts between 2 pieces of clingfilm and flatten with a rolling pin until approx 1 cm thick.
  • Divide each breast into 3 strips.
  • Mix the flour with salt and pepper.
  • Put eggs in another bowl.
  • In a third bowl mix the panko (or toasted breadcrumbs), seeds, turmeric, cayenne and 3/4 teaspoon of salt.
  • Dip each each strip of chicken in flour, then egg, then breadcrumb seed mix.
  • Fry each coated chicken strip until crisp and golden. Serve with a wedge of lemon, some new potatoes, a green salad and our yummy Ranch Dressing.
