Fig, Mustard and Marmalade Glazed Ham

Get ready to blow your taste buds' minds with this fancy Fig, Mustard, and Marmalade Glazed Ham! 

This delectable dish is a perfect combination of sweet and savoury flavours that will leave you craving more. The juicy ham, glazed with a delightful blend of fig, mustard, and red onion marmalade, creates a symphony of tastes that will impress even the most discerning food connoisseur. The richness of the ham perfectly complements the fruity sweetness of the fig and the tangy kick of the mustard, while the marmalade adds a sticky glaze that caramelizes beautifully.


  • 5kg gammon preferably smoked but not to worry if not!
  • 1 onion (chopped into quarters)
  • 2 carrots (roughly chopped into quarters)
  • 2 bay leaves
  • 10 cloves
  • 10 peppercorns
  • 1 cinnamon stick
  • 1 stock cube
  • 500ml apple juice
  • 2” piece of ginger if you have some

    Glaze Ingredients 
  • 2 Tbsp Red Onion Marmalade
  • 2 Tbsp Fig and Mustard Sauce


  1. Oven 190 degrees C
  2. Put the Ham into a large pan with all the other main
  3. ingredients and top up with cold water. Bring to the boil
  4. and then put into the oven to simmer for 1 hour 45 mins.
  5. Drain off the liquid and put the Ham into a roasting tin ready for the glaze.
  6. It is easier to let it cool a little and then to peel away the
  7. outer rind leaving a good layer of fat for the glaze. Score
  8. the fat in a criss cross fashion.
  9. Mix the glaze ingredients together and spread all over the fat of the ham and the sides.
  10. Return the pan to the oven for 20 mins and let the glaze caramalize to a lovely golden colour and you are done!
  11. Leave it to cool a little to serve warm or cold.
