This delectable dish is a perfect combination of sweet and savoury flavours that will leave you craving more. Ingredients
- 5kg gammon preferably smoked but not to worry if not!
- 1 onion (chopped into quarters)
- 2 carrots (roughly chopped into quarters)
- 2 bay leaves
- 10 cloves
- 10 peppercorns
- 1 cinnamon stick
- 1 stock cube
- 500ml apple juice
- 2” piece of ginger if you have some
Glaze Ingredients - 2 Tbsp Red Onion Marmalade
- 2 Tbsp Fig and Mustard Sauce
Method
- Oven 190 degrees C
- Put the Ham into a large pan with all the other main
- ingredients and top up with cold water. Bring to the boil
- and then put into the oven to simmer for 1 hour 45 mins.
- Drain off the liquid and put the Ham into a roasting tin ready for the glaze.
- It is easier to let it cool a little and then to peel away the
- outer rind leaving a good layer of fat for the glaze. Score
- the fat in a criss cross fashion.
- Mix the glaze ingredients together and spread all over the fat of the ham and the sides.
- Return the pan to the oven for 20 mins and let the glaze caramalize to a lovely golden colour and you are done!
- Leave it to cool a little to serve warm or cold.
